This recipe is a variation of my pineapple banana bread recipe.

How to store banana pineapple muffins?

These muffins are best enjoyed right away, but you can also store them for up to 3 days in an air-tight container.

  1. Don't overmix your batter.
  2. Make sure to drain your pineapples really well. Extra liquid can make the cooking time longer.
  3. Use overripe bananas, because they are sweeter and the perfect texture.

Pineapple Banana Muffins

These tropical pineapple banana muffins are bursting with flavor. The chunks of pineapple add a delicious twist to this familiar favorite!

Ingredients

Ingredients:

  • ½ cup salted butter (melted)
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 2 eggs
  • 4 medium bananas going brown preferably as they are sweeter
  • ½ teaspoon vanilla
  • 1 teaspoon baking soda
  • 1 ½ cups all-purpose flour
  • 1 cup chopped pineapples or pineapple tidbits drained

Instructions

Directions:

  1. Pre-heat your oven to 350 degrees Fahrenheit. Then, peel the bananas and put them into your mixing bowl.
  2. Using the whisk attachment, run this for about 30 seconds until the bananas are mashed up.

  3. Then, place the butter in a microwave safe bowl and heat for about 10-20 seconds until melted. Add this to your mashed bananas in your mixing bowl.
  4. Next, add both the brown sugar, the granulated sugar, and the eggs and mix until smooth for about a minute. Add your vanilla and baking soda next and mix until fully incorporated.
  5. Finally, you will add the flour ½ cup at a time, making sure to mix well between each addition. The last step is to add the drained pineapples to the batter and stir until they are evenly distributed.

  6. Add liners to a cupcake pan. Then scoop batter into each liner, a little over half full.

  7. Bake for 17-19 minutes or until a toothpick comes out clean when inserted into the center.

Recipe Notes

Don't overmix your batter. 

Make sure to drain your pineapples, extra liquid can affect the cooking time.
