Can you use store bought pie crust?

Yes, you can make these pecan pie bars with store bought pie crust. I prefer my flaky pie crust recipe, but any recipe will work!

You will still want to pre-bake the pie crust (in your cake pan) at 350 degrees Fahrenheit for 12 minutes.

Why do pecan pie bars need to chill?

This helps them set up. While they are still hot out of the oven, the filling hasn't had a chance to thicken yet.

Like with a pie, you shouldn't cut it until it's had a chance to rest.

Ingredients

Crust:

  • ½ cup butter
  • 4 oz cream cheese
  • 1 ¼ cup all-purpose flour
  • ½ tablespoon granulated sugar
  • 2-3 Tbsp cold water

filling

  • ½ cup butter melted
  • 1 cup brown sugar firmly packed
  • 1 cup dark corn syrup
  • 2 teaspoon vanilla extract
  • 3 eggs
  • 6 Tbsp flour
  • 1 ½ cup chopped pecans

Instructions

  1. Start by making the pie crust, if you are using a store bought crust then simply place it in the bottom of a 9x12 inch cake pan.

Pie Crust

  1. Cut your butter and cream cheese into cubes then place in a medium bowl.

  2. Add in your flour and sugar. Then using a pastry blender or two forks, cut the flour into the butter and cream cheese until crumbly.

  3. Then, add in the water. Knead the dough with the palms of your hands until the dough starts to come together. Then, refrigerate the dough for 10 minutes.

  4. Roll the dough into a rectangle and place in your 9x12 inch cake pan.

  5. Pre-bake the pie crust at 350 degrees Fahrenheit for 12 minutes.

Filling

  1. Combine the melted butter, brown sugar, and dark corn syrup in a large mixing bowl. Whisk together for about 2 minutes.

  2. Then, add in your vanilla extract, and eggs. Whisk again for another couple minutes and then add in your flour.

  3. Finally, pour in your chopped pecans. Stirl this with a rubber spatula and then pour into your cake pan with the pre baked pie crust.

  4. Bake at 350 degrees Fahrenheit for 32-34 minutes. The edges will bet set, but the center my still be gooey.

  5. Completely cool the cake pan, then place it in the refrigerator for at least an hour to chill. This also helps the bars come out cleaner when you cut them.
