What you need to make Strawberry Lemon Pie
- 2 cups frozen strawberries
- ⅓ cup granulated sugar
- ½ cup lemon juice
- 8 oz cream cheese
- 1 tablespoon lemon zest
- ½ cup sweetened condensed milk
- 16 oz cool whip or whipped cream
- 1 10-inch graham cracker crust (you can use a smaller one, but you might have extra filling)
How to make Strawberry Lemon Icebox Pie
In a medium sauce pan, combine the strawberries and sugar. Heat over low until the strawberries unthaw.
Then, add in the lemon juice. Stir, and remove from heat. You want this to cool off just a little bit before adding it to the cream cheese.
In a mixing bowl, combine the cream cheese, and lemon zest. Then, pour the cooled strawberry lemon mixture into the bowl. Whisk for about 5 minutes so that the cream cheese has started to break down and mix with the strawberries.
Then, add in the sweetened condensed milk. Whisk for another 2 minutes.
Fold the cool whip into the mixture with a rubber spatula or lightly whisk just until the cream and the strawberry mixture have become one.
Scoop this strawberry lemon cream into a 10-inch graham cracker crust. Place it in the freezer to chill for at least 1 hour.
