
A simple and refreshing strawberry lemon pie you can make easily. Paired with a graham cracker crust, this fluffy dessert is amazing.
In a medium sauce pan, combine the strawberries and sugar. Heat over low until the strawberries unthaw. Then, add in the lemon juice. Stir, and remove from heat.
In a mixing bowl, combine the cream cheese, and lemon zest. Then, pour the cooled strawberry lemon mixture into the bowl.
Whisk for about 5 minutes so that the cream cheese has started to break down and mix with the strawberries. Then, add in the sweetened condensed milk. Whisk for another 2 minutes.
Fold the cool whip into the mixture with a rubber spatula or lightly whisk just until the cream and the strawberry mixture have become one.
Scoop this strawberry lemon cream into a 10-inch graham cracker crust. Place it in the freezer to chill for at least 1 hour.
