Lemon Crinkle Cookies

A little bit tart and a whole lot sweet, these lemon crinkle cookies are such a delicious treat. They also kind of taste like Fruit Loops cereal.

Perfect for summer or during the winter when you are craving a taste of summer. 

What you need to make lemon cookies:

  • ½ cup butter, softened
  • ¼ teaspoon salt
  • ¾ cup granulated sugar
  • 1 egg
  • 2 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • ½ teaspoon baking soda
  • 1 ¾ cup all-purpose flour
  • yellow food coloring (optional)
  • ¼ cup powdered sugar

How to make Lemon Crinkle Cookies

Start off by pre-heating your oven to 350 degrees Fahrenheit. Then, combine the softened butter, sugar, and salt together. 

Then, add in your egg. Whisk until just beaten.

Add in the lemon juice and lemon zest. Whisk again.

Then, add in the baking soda. Whisk, and then add in the flour. 

Squeeze a few drops of yellow food coloring. Mix this together so that the color is fully incorporated into the dough.

Scoop cookie dough into balls. Then, roll those in powdered sugar. Place the balls on a cookie sheet lined with parchment paper. Then with the palm of your hand flatten them out (this just helps them cook more evenly).

Bake for 8-10 minutes or until the edges of the lemon cookies are golden brown. Let the cookies sit for just a minute on the cookie sheet before transferring to a cooling rack. Then, enjoy!

Instructions

Directions:

  2. In a large mixing bowl, combine the butter, sugar, and salt. Whisk together, then add in the egg. Whisk again.

  3. Next, add in the lemon juice and lemon zest. Then, add in your baking soda.

  4. Finally, add in your flour. If you want a vivid yellow cookie, add in the yellow food coloring now.

  5. Scoop out balls of cookie dough and roll in powdered sugar. Smash down with the palm of your hand.

  6. Place on a cookie sheet with parchment paper. Bake for 8-10 minutes or until lightly golden brown around the edges.
