Peanut butter is a staple in my house. If you are a family that loves peanut butter as much as mine, you will love these soft peanut butter cookies.

1 1/4 cup brown sugar

1 egg

3/4 cup Peanut Butter

3 Tbsp Milk

1 Tbsp vanilla

3/4 tsp baking soda

1/2 cup butter (softened, not melted)

2 cups flour

Pre-heat oven to 375 degrees fahrenheit.

First, add brown sugar, egg and peanut butter in a large mixing bowl, and mix thoroughly. Then, add the milk, vanilla and baking soda (I like adding this before the flour because then it is incorporated better). Next, add the softened butter–it is important that it is soft and not melted because it makes the batter soft and fluffy. Then, slowly add the flour in 1/2 cup at a time.

Roll into balls and then place on a cookie sheet lined with parchment paper (for easy clean up). Next, flatten with a fork tines using the criss-cross method. Then, bake for 7 1/2 – 8 minutes rotating half-way. Let them cool about 1 minute on the cookie sheet to let the cookie sink down to it’s final shape (see pictures). Then transfer to a plate or cooling rack.

Cookies right out of the oven

Cookies cooled for about 1 minute on cookie sheet (they have flattened out a little bit)

  1. Yum. The last time I made peanut butter cookies they all melted into one large crispy mass. I’m looking forward to trying out your recipe instead. Thanks so much!
