soft peanut butter cookies

Peanut butter is a staple in our house. If you are a family that loves peanut butter as much as mine, you will LOVE these soft peanut butter cookies. They are easy to make, but taste a thousand times better than store-bought!

The funny thing about peanut butter cookies, is that it is actually the very first thing I ever made. Not only that, I have tried so many variations of recipes and experimented over the course of about 10 years and this recipe is by far the BEST. Seriously, try it today! You won’t be disappointed.

Ingredients:

1 1/4 cup brown sugar

1 egg

3/4 cup Peanut Butter

3 Tbsp Milk

1 Tbsp vanilla

3/4 tsp baking soda

1/2 cup butter (softened, not melted)

2 cups flour

Directions:

Before you make these soft peanut butter cookies, pre-heat the oven to 375 degrees fahrenheit.

Next, add the brown sugar, egg and peanut butter into a large mixing bowl, and mix thoroughly. Then, add the milk, vanilla and baking soda (I like adding this before the flour because then it is incorporated better). Next, add the softened butter–it is important that it is soft and not melted because it makes this batter soft and fluffy. Beat on medium for about 2 minutes until the batter starts to look lighter. Then, slowly add the flour in 1/2 cup at a time, making sure to mix thoroughly after each addition.

Once you are finished making the dough for these soft peanut butter cookies, roll into balls and then place on a cookie sheet lined with parchment paper (for easy clean up). Next, flatten with a fork tines using the criss-cross method. Then, bake these sof peanut butter cookies for 7 1/2 – 8 minutes rotating half-way. Let them cool about 1 minute on the cookie sheet to let the cookie sink down to it’s final shape (see pictures). Then transfer to a plate or cooling rack.

This recipe makes 24 soft peanut butter cookies, unless you have cookie dough eaters in your family like mine ;). Seriously, please tell me I’m not the only one with a husband or significant other who likes to eat the cookie dough before you ever get a cookie cooked?  Anyway, thanks for reading! 1. Yum. The last time I made peanut butter cookies they all melted into one large crispy mass. I’m looking forward to trying out your recipe instead. Thanks so much!
