These chewy snickerdoodle cookies are absolutely delicious. Rolled in a cinnamon and sugar coating to really give them that extra flavor!

Grab your mixer and let's get started:

mixing bowl with softened butter, brown sugar and granulated sugar

1.Pre-heat your oven to 325 degrees Fahrenheit. Then, combine the softened butter, granulated sugar, and brown sugar together in a mixing bowl. Cream this together until smooth.

adding eggs and vanilla extract to the creamed butter mixture

2. Next, add in the 2 eggs, vanilla extract, baking soda and salt. Mix this together until smooth.

adding ground cinnamon to the cookie batter

3. Then, add in the (1 tsp) ground cinnamon. This is what separates a snickerdoodle from a regular sugar cookie, well that and the cinnamon sugar topping!

adding the all-purpose flour to the cookie mixture

4. Finally, add in the flour. I like to mix ½ cup in at a time just so it doesn't get clumpy. Then, form the dough into about 18 1-inch balls.

5. Set the cookie dough aside and make the cinnamon sugar topping. This will be what you roll your snickerdoodle dough balls into. Combine ¼ cup granulated sugar, and 1 tablespoon of ground cinnamon together in a small bowl. Whisk this together.

6.Roll each cookie dough ball in the cinnamon and sugar topping, then place it in on a cookie sheet lined with parchment paper. Then, with the palm of your hand, lightly flatten them down just a little. This helps them cook evenly in the oven.

7. Bake the cookies for 10-12 minutes or until they edges start to turn golden brown. I also like to rotate the pan half-way through the cooking time to allow even cooking.

8. Allow them to cool on the pan for a few minutes before transferring them to a cooling rack or plate. Easier said then done, especially in my family! If my hubby is around when I'm making cookies, a lot of the time, the cookies never make it to the oven...lol! (Please note, do not eat raw cookie dough, it could make you sick.)
