Meatloaf recipe with barbecue sauce

Meatloaf is such a common meal but not with this meatloaf recipe! It will make your meatloaf stand out from the rest.

Top it off with some homemade barbecue sauce and your family is going to beg you to make this again and again.

This particular meatloaf recipe even the pickiest eaters will love!

Meatloaf Recipe Ingredients List

Here's what you need to make this mouth-watering meatloaf with barbecue sauce:

for the meatloaf:

  • 2 eggs
  • ⅔ cup milk
  • 1 sleeve of saltine crackers, crushed
  • 1 ½ cup shredded sharp cheddar
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 2 lbs. raw ground beef

for the sauce:

  • ½ cup ketchup
  • ½ cup brown sugar
  • ¼ teaspoon mustard

How to make meatloaf

Pre-heat oven to 350˚F. Then in a large bowl, beat eggs and the milk together.

adding milk and eggs to a large mixing bowl

Next, you will place 1 sleep of saltine crackers into a ziploc bag and crush them with your hands (great way to relieve stress) or a rolling pin. Then, you will dump the crushed crackers into the milk and egg mixture.

adding crushed saltine crackers to the milk and egg mixture

When crackers have been thoroughly coated in egg-milk mixture, stir in cheese, and salt & pepper. Then add your beef. I like to mix the beef with my fingers, so the cracker mixture is evenly distributed among the meat.

mixing the ground beef into the soggy crackers with your hands

Then I form a loaf and cook on a greased cake pan for 50-55 minutes or until the meat has cooked all the way through (the thicker you make the loaf, the longer it will take).

While the meatloaf is cooking, combine ketchup, brown sugar, and mustard together in a small bowl, and mix until the brown sugar has completely dissolved.

Then, you will refrigerate this barbecue sauce. When the meatloaf has cooked for 30 minutes, pull it out and rotate the pan. Then, add the barbecue sauce mixture to the top of the meatloaf.

My guys love meatloaf! I've never tried it with crackers or cheese before, though. I usually use oatmeal. I'll have to give this recipe a try!
