Meat Loaf

  • 2 large eggs
  • cup milk
  • 1 sleeve saltine crackers crushed
  • 1 ½ cup sharp cheddar cheese shredded
  • 1 teaspoon salt
  • ¼ teaspoon ground pepper
  • 2 lbs raw ground beef

Barbecue Sauce

  • ½ cup ketchup
  • ½ cup brown sugar
  • ¼ teaspoon mustard

Instructions

Directions:

  1. Pre-heat oven to 350˚F. Then in a large bowl, beat eggs and milk together.

  2. Next, you will place 1 sleep of saltine crackers into a ziploc bag and crush them with your hands (great way to relieve stress) or a rolling pin. Then, you will dump the crushed crackers into the milk and egg mixture.

  3. When crackers have been thoroughly coated in egg-milk mixture, stir in cheese, and salt & pepper. Then add your beef. I like to mix the beef with my fingers, so the cracker mixture is evenly distributed among the meat.

  4. Then I form a loaf and cook on a greased cake pan for 50-55 minutes or until the meat has cooked all the way through (the thicker you make the loaf, the longer it will take).

  5. While the meatloaf is cooking, combine ketchup, brown sugar, and mustard together in a small bowl, and mix until the brown sugar has completely dissolved. Then, you will refrigerate this barbecue sauce. When the meatloaf has cooked for 30 minutes, pull it out and rotate the pan. Then, add the barbecue sauce mixture to the top of the meatloaf.

  6. Cook for another 20-25 minutes. Let it cool for 5-10 minutes, and then enjoy the best meatloaf recipe with homemade barbecue sauce!
