Cheeseburger Quesadilla

This quick and easy cheeseburger quesadilla is a great snack, appetizer, or even light dinner. It's filled with crumbly ground beef, cheese, and sauteed onions while remaining crisp on the outside.

  • 6 Flour Tortillas
  • 1 ½ cup shredded cheese (your favorite kind)
  • 1 medium onion
  • 2 tablespoon salted butter
  • 1 pound ground beef
  • olive oil

Instructions

Directions:

  1. Brown the ground beef in a medium frying pan. Season to taste or leave plain to avoid excess sodium.
  2. While the hamburger is cooking, chop your onion and saute in a small frying pan with the 2 tablespoons of butter on medium-low heat until onions start to carmelize and get that brown color. I like using yellow vidalia onions because they are a little bit sweet which makes them taste amazing when sauteed.
  3. Next you will start frying the cheesburger quesadilla. I use olive oil to fry the flour tortillas as it's a little healthier of an option. So what you do is add olive oil to a large frying pan and then place your tortilla in the pan. Add ¼ cup cheese (or more if you like it extra cheesy), hamburger and onions to just one side of the tortilla.
  4. The next thing you do to the cheeseburger quesadilla is fold the tortilla section that has nothing over the filled side. Then, cook on medium heat for about 3-4 minutes or until golden brown. Make sure to flip the cheeseburger quesadilla halfway through to ensure that each side is golden brown and crisp.
