What's the best popsicle mold?
For this recipe, I used this popsicle mold from Amazon, but any mold should work.
How to make raspberry creamsicles
Heat the fresh raspberries and sugar over medium low heat in a small frying pan.
Use a rubber spatula and crush the raspberries. This helps release the juice and separates the seeds.
Pour the raspberry mixture through a fine mesh sieve to separate the seeds from the liquid. Use the same rubber spatula to push any of the raspberry puree through.
Then, pour the heavy whipping cream into the bowl with the raspberry sauce.
Whisk for 1 minute, then pour this creamsicle mixture into the molds. Place popsicle sticks, and freeze for 3-4 hours.

- 6 oz fresh raspberries
- ⅓ cup granulated sugar
- 1 cup heavy whipping cream

In a small frying pan our sauce pan, combine the raspberries and sugar. Heat on medium low heat for 5 minutes.

As the raspberries are heating up, crush them with a rubber spatula. This will help release the raspberry juice.

Then, pour through a fine mesh sieve and into a bowl to collect the rasperry sauce without the seeds.

Pour the heavy whipping cream into the raspberry sauce and stir. Then, pour the creamsicle mixture into 5 popsicle molds.

Insert the sticks and freeze for at least 3-4 hours or until set.

Hey, there! We love this recipe and have made it once already - subbing heavy whip for half and half, then subbing regular sugar for Monk Fruit sweetener. We tried the recipe again, doing everything the same as last time, but the half and half curdled when we added it to the sauce. It didn't do that last time. Any tips? Did we let the sauce cool too much, or maybe it wasn't cool enough? Thank you!
