I don’t usually toot my own horn, but this meatloaf with barbecue sauce recipe is one I like to brag about. I have adapted many different recipes over the years, and my husband absolutely loves when I make this:
2/3 cup milk
1 package saltine crackers, crushed
1 ½ cup shredded sharp cheddar
1 tsp salt
¼ tsp pepper
2 lbs. raw ground beef
For the sauce:
½ cup ketchup
½ cup brown sugar
1/4 tsp mustard
Pre-heat oven to 350˚F. Beat eggs and then add milk and crushed crackers. When crackers have been thoroughly coated in egg-milk mixture, stir in cheese, and salt & pepper. Then add your beef. I like to mix the beef with my fingers, so the cracker mixture is evenly distributed among the meat. Then I form a loaf and cook on a greased cake pan for 45 minutes or until the meat has cooked all the way through (the thicker you make the loaf, the longer it will take).
Combine ketchup, brown sugar, and mustard together in a small bowl. Refrigerate. At about 30 minutes of cooking, pull the meat loaf out and rotate the pan. Also, add the sauce mixture to the top. Cook for the last 15-20 minutes. Let it cool for about 5-10 minutes, but then enjoy!
